For the presentation of COLLECTION 02, BIÉDE worked with PREMIER MAI, a café near Yoyogi Park, on a blue long mille-feuille plate and lemonade. The limited menu was served from October 11 through the end of December 2021.
Tasting COLLECTION 02
The starting point was the BIÉDE COLLECTION 02 story. BIÉDE reworked PREMIER MAI's seasonal long mille-feuille through the collection's narrative, and the two developed a drink to accompany it.
The mille-feuille held the light of night; the lemonade, a sky moving from night glow towards dawn. It extended a fashion collection beyond clothing and bags into taste, colour and changing time.

《BIÉDE》Blue Long Mille-feuille Plate
A 22 cm hand-folded pastry was layered with house-made lemon custard and cream, then paired with blueberries, redcurrants, gin jelly and Cedric Casanova FRCIC olive oil.
The blue cream and jelly used butterfly pea. The night light running through COLLECTION 02 was placed onto the plate.
《BIÉDE》Blue Lemonade
A caffeine-free blue tea made with organic butterfly-pea flowers was finished with lemon pulp, lemon juice, cardamom and house-made orange-honey syrup. Its shift from blue to reddish purple suggested a sky moving from night glow to dawn.
About PREMIER MAI
PREMIER MAI is a café centred on beginnings, serving a slightly dressed-up breakfast throughout the day. Its custom griddle is central to the cooking, while the space also brings ingredients and products into the café as a form of presentation.
